The Ultimate Fruit & Nut Bread

This recipe is surprisingly easy and so tasty! For this loaf, you basically need to use 1 cup of mixed nuts and seeds and 1 ½ cups of mixed dried fruit. The below recipe is the quantities of nuts, seeds and fruit that I used, but feel free to mix things up with what you have on hand. Hazelnuts or walnuts would be great, and figs or cranberries would be lovely too. I use the flaxseeds and flaxseed meal as the binding agent though, so I would keep that in, or add a couple of tablespoons of chia gel instead. Enjoy!



  • 1 cup spelt flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • pinch of salt
  • 1 teaspoon cinnamon
  • ¼ cup pumpkin seeds
  • ¼ cup sunflower seeds
  • ¼ cup of chopped almonds
  • 2 tablespoons sesame seeds
  • 1 tablespoon quinoa seeds
  • 1 tablespoon golden flaxseed meal
  • 1 tablespoon whole flaxseeds
  • ½ cup chopped dates
  • ¼ cup chopped crystalised ginger
  • 5 dried apricots chopped
  • ¼ cup sultanas
  • 2 tablespoons goji berries
  • 1 ¼ cups water
  • ¼ cup coconut oil

Preheat your oven to 180 degrees Celsius.

Sift the flour, baking powder, baking soda, salt and cinnamon into a large bowl.

Add the seeds, nuts and dried fruit and mix well.

Add the water and coconut oil and mix well to combine.

Line a baking tin with baking paper and pour the mixture in.

Bake for around 30-35 minutes or until golden on top and a skewer comes out clean.

Remove and allow to cool before slicing.
