Sunrise Nourish Bowl

This is a little different from my morning bowls which are usually a smoothie base! I do love making chia pudding though and one of the best things is you can make up a batch and keep it in the fridge for up to 3-4 days! It makes a great quick and easy breakfast that way or a good dessert too! This recipe was inspired by a special birthday breakfast I made a little while back now, it is a lovely breakfast to offer someone you love…



3 tablespoons of chia seeds

1 cup of coconut milk or almond milk

1 teaspoon of coconut nectar

A small pinch of vanilla powder

Fresh fruit sliced- I used banana, kiwi fruit and blueberries

Homemade or bought muesli- I mixed dedicated coconut, flaked almonds, flax seeds, dates, raisons, pumpkin seeds


Prepare the chia pudding by adding the milk to the seeds and whisking well. Allow it to sit for 10-15 minutes to absorb, mixing frequently so it sets evenly and without clumps. Add the sweetener and vanilla and mix to combine.

While the chia absorbs, slice up your fresh fruit and prepare your muesli by mixing all the ingredients together in equal portions- I used around 1 tablespoon of each ingredient. You can also use your favorite store purchased variety.

When the chia is ready, simply arrange the chia pudding, muesli and sliced fruit in your bowl. You can drizzle with more coconut nectar or add a dollop of coconut yogurt if you desire.
