Raw Nectarine and Cherry Crumble

Fruit crumbles make for really simple yet tasty raw desserts! You can adjust the fruit depending on what is in season and you can use whatever dried fruit and nuts you like to make the base and crumble. This is a new combination of mine and it was simply divine!

Base and crumble:

  • ¼ cup of coconut
  • ¼ cup of raisons
  • ¼ cup of dates
  • 1/4 cup pecans

Blistz all ingredients n your food processor until they have broken down and are just beginning to come together. The mixture should be loose and crumbly, but will hold together when you squeeze it between your fingers. Use the first half to line the bottom of two jars or glasses. Keep the second half aside which you will use as the crumble topping.

  • 4 ripe nectarines sliced finely
  • 20 or so cherries, pitted and halved
  • 2 teaspoons of coconut oil
  • 1 teaspoon coconut nectar
  • 1 teaspoon vanilla

Add all ingredients to a bowl and mix very gently to combine.

To assemble, spoon an equal portion of the nectarine mixture into the two glasses on top of the base.

Then crumble the remaining base mixture over the top.

Top with extra goji berries and coconut to serve.
