Morning Porridge with cardamom, ginger and peanut butter

This is a pretty special way to start the day! Perfect for cold winter mornings where you want to dive into something nourishing and delicious! I never liked peanut butter as a child, but at the health food store near us you can grind your own from fresh organic peanuts and it is wonderful! Perfect on gluten free toast or used to create a yummy raw satay sauce. I had seen images of people using peanut butter on their morning smoothie bowls, and although I haven’t taken that leap yet, I thought spooned over warm porridge would be a little heavenly, and yes- it was! With the additional of ginger and cardamon, this is a real morning treat and still perfectly good for you too!



  • ½ teaspoon of coconut oil
  • ¼ orange- zest only
  • ¼ teaspoon of ginger
  • ¼ teaspoon of cinnamon
  • 1/8 teaspoon of cardamom
  • 1 cup of rolled oats or quick oats
  • 1 tablespoon of flax seeds
  • 1 tablespoon of sunflower seeds
  • 1 tablespoon of coconut shreds
  • 1 tablespoon of sultanas
  • 1 ½ cups of almond milk
  • 1 heaped teaspoon of peanut butter

Melt the coconut oil in a pan and add the orange zest, ginger, cinnamon and cardamom and allow to cook for a few moments until aromatic.

Add the oats and stir to coat, then add the almond milk.

Cook this down until the milk warm’s and the oats soften, then stir through the flax sees, sunflower seeds, coconut shreds, sultanas and peanut butter.

Allow to cook for a few more minutes on low so the flavors combine, adding a touch more milk if need be depending on how you enjoy the consistency of your porridge.

Place the porridge either in one large bowl or two smaller bowls and top with kiwiw fruit, banana, coconut, mulberries and chia seed sprinkles.
