Late Summer Plum Crumbles

These little crumbles are super quick and easy to make and look divine. They also taste pretty darn good too! You can use any stone fruit really, peach would be lovely, but blood plums are a favourite of mine and Im making the most of them before they go out of season!

  • 2 frozen bananas chopped
  • 3 blood plums chopped
  • 1/4 cup of cashews soaked in filtered water for 2 hours and then strained and rinsed well
  • 1 1/2 tablespoons of coconut oil
  • 1/2 a teaspoon of psyllium powder
  • 1 tablespoon of acai or maqui berry powder
  • 5 drops of vanilla liquid stevia
  • 2-3 tablespoons of almond milk

For the crumble-

  • 1 tablespoon each of coconut flakes, sultanas, flaked almonds, sunflowers seeds and goji berries

For the filling, blend all of the ingredients together in a high speed blender until completely smooth and creamy.

Pour the mixture into two glass jars of your choice and place in the fridge.

For the crumble topping, simply combine all of the ingredients in a small bowl and mix together and then sprinkle on top of your filling.

Set in the fridge for at least two hours and enjoy!
